Rhubarb Cinnamon Muffins

I cut down the rest of my rhubarb this morning which yielded about 20 cups and 74 ounces chopped ! I Decided I’ll be making jam later this afternoon but as for this morning I’m baking some muffins.

Ingredients:
1/2 cup finely chopped fresh rhubarb
1/2 cup unsweetened applesauce
1 tsp high quantity cinnamon
1/2 cup raw sugar
2 TB ground flaxseed
2 TB canola oil
1 tsp pure vanilla extract
1 farm fresh egg
2/3 cup low fat buttermilk
1/4 tsp kosher salt
2 tsp baking powder
1 cup AP flour
1/2 cup Whole Wheat Pastry Flour
cinnamon and sugar for sprinkling (optional)

Yields 12 muffins!

Preheat oven to 400 degrees and spray muffins tins lined with either paper liners or silicone liners.

Directions:

1. In a large bowl mix flours, flaxseed, sugar, baking powder, salt, cinnamon. Set aside.

2. In a separate bowl mix egg, buttermilk, vanilla, applesauce, & canola oil.

3. Add liquid batter to dry mix. Be careful not to over mix.

4. Fold in chopped rhubarb.

5. Portion out batter into muffin tins by using a number 16 scoop.

6. Bake for 20 minutes or until tooth pick comes out clean.

Whole Grain Oat Rhubarb Cookies

My husband and I have oodles of rhubarb this time of year. We were in the mood for some cookies. I adapted this recipe from the TOH website to cut down on the saturated fat.

Yields 32 cookies using a size 60 scoop. Preheat oven to 350 and bake for 13 minutes.

Ingredients :
3/4 cup raw sugar
1/2 canola oil
1/2 tsp pure vanilla extract
1 egg or 2 egg whites or 1/4 cup egg substitute
1/2 cup white chocolate chips
1/2 cup dried cranberries
3/4 cup fresh rhubarb (patted dry)
1/4 tsp kosher salt
1/2 tsp baking soda
1/4 tsp ground Vietnamese cinnamon
A pinch of nutmeg
1 1/4 cup 100% old fashioned oats
3/4 cup whole wheat pastry flour

Directions:
Line half sheet pans with parchment paper and preheat oven to 350 degrees.

In a large bowl mix canola oil, and sugar together well. Than add egg and vanilla together whisk to incorporate.

In a medium bowl whisk together flour, oats, salt, baking soda, cinnamon, and a pinch of nutmeg.

Whisk to incorporate all dry ingredients together well. Add the dry ingredients into the wet.

Mix with spatula to incorporate.

Add chopped rhubarb, cranberries and white chips fold into cookie batter.

Use a number 60 scoop to measure out into perfect size cookies. Please keep in mind they are very wet and may want to fall apart but will bake just fine.

Bake for 12 to 13 minutes. The rhubarb makes these pretty moist. I let them sit on the pan for about a minute before letting the cool off on wire rack.

Once the cookies are cooled if you wish drizzle them with some melted white chocolate for a special touch.

Place 2/3 cup white chocolate in microwave keep heating by 30 second sections until melted. Place in a squeeze bottle and make zig zag marking!

Rhubarb Spice Coffee Cake

I am starting to have oodles of rhubarb in the garden but nothing like my grandpa’s garden. He has 50 plants this year and I only have two.

This morning I was contemplating what can I make that I haven’t made yet with this beautiful vegetable? …Coffee cake…I love baking with rhubarb! There are just so many endless possibilities.

I’m not really sure where the concept of coffee cake originated. Honestly I think it must of initiated from someone who wanted to eat cake for breakfast with their coffee. Those of you that have ate it before know there is no coffee in the cake. I wanted to make a healthier version of this classic cake. I decreased the butter content and used only whole wheat flour to add additional fiber.

I can remember my mom making coffee cake for our family growing up on the weekends. It was always a special treat!

Yields 6 servings

Batter Ingredients:
1 cup whole wheat pastry flour
1 tsp Chinese 5 spice
2 TB canola oil
2 TB egg substitute
1/2 cup raw sugar
1.5 tsp baking powder
1/4 tsp kosher salt
1 & 3/4 cup fresh rhubarb chopped ( if using frozen measure frozen not thawed)
1/2 cup skim milk or vanilla almond milk
1 tsp Mexican vanilla extract

Topping ingredients:
1/8 & 1/4 cup of raw sugar
2 TB Unsalted butter
1/2 tsp Chinese 5 spice

Preheat oven to 350

1. Chop up your rhubarb (it will take 4-5 stalks depending on the size)

Set aside.

In a large bowl beat canola oil and sugar.

Whisk until combined.

Add vanilla and egg substitute, whisk until incorporated.

Set aside.

In a separate bowl mix flour, baking powder, salt, and Chinese 5 spice until all ingredients mixed thoroughly.

Add 1/3 of the dry ingredient blend to the wet batter and 1/3 of milk. Alternate between both (milk & dry ingredients whisk after every addition) and mix until combined.

Fold in rhubarb.

Make sure to spread rhubarb throughout batter evenly.

Pour wet batter into an 8 by 8 glass cooking sprayed dish or equivalent.

Use a spatula to get all the batter into the baking dish.

Set aside.

In a small bowl place butter, sugar, and Chinese 5 spice all together.

Crumble the topping between fingers until resembles wet sand.

Sprinkle the topping evenly on-top the wet batter.

Bake for 45 minutes in preheated oven on 350.

Remove from oven and let cool for 5 minutes on wire rack.

Whole Wheat Rhubarb Almond Bread

Spring time means rhubarb season! This year my very own rhubarb plants are producing rhubarb stalks. I’m very excited to start baking with this vegetable!

This morning I ended up baking rhubarb mini loaves! This is the second recipe on rhubarb bread on this blog. I tried to decrease some of the calories with this one.

I just love the way fresh rhubarb looks so colorful!

Ingredients:
2/3 cup raw sugar
1/3 cup canola oil
2 TB milled flaxseed
1 tsp high quality cinnamon
1 tsp baking soda
1 Cardamon pod ground
1 cup fat free butter milk
1/4 cup egg substitute
2 1/2 cups of whole wheat pastry flour
1 1/2 cup chopped rhubarb ( frozen is okay just make sure to thaw it first)
1/3 cup slivered almonds
Cinnamon sugar optional
Cooking spray

Directions:
Preheat oven to 350 degrees.
Spray with cooking spray to prevent sticking.

In a large bowl mix oil, flaxseed, and sugar with a whisk.

Add vanilla, egg, substitute and buttermilk.

In a separate bowl whisk together flour, cinnamon, Cardamon, and baking soda.

Pour the dry ingredients into the liquid batter.

Whisk together once combined fold in rhubarb.

Fold until batter is fully incorporated.

Scoop 1 cup of batter into mini bread pans and sprinkle with cinnamon and sugar.

Bake for 30 minutes or until toothpick comes out clean.

Rhubarb Almond Crisp

Ingredients:
1/2 Cup AP Flour
1/2 Cup Whole Wheat Pastry Flour
1 cup Brown Sugar (not packed)
1/2 Cup melted butter (no added salt)
3/4 cup quick oats
4 cups of Chopped Rhubarb
1 cup water
1 cup Granulated Sugar
1/4 cup toasted slivered Almonds
2 TB corn starch
1 tsp pure vanilla

Directions:

Preheat oven to 325 degrees.

1. Place first three ingredients in medium bowl.

2. Mix. Add in melted butter.

Mix and set aside.

3. In a sauce pan place water, sugar, and corn starch on medium heat.

4. Whisk consistently until thickens and comes to a boil and sauce is translucent.

5. Spray a 9 by 13 baking dish with cooking spray. Spread 3/4 of the oat mixture on the bottom of the pan.

6. Sprinkle chopped rhubarb on oat mixture.

7. Once all the rhubarb is spread

Remove sugar sauce from heat add vanilla and mix. Pour syrup over rhubarb evenly.

8. Take the toasted almonds and add to remaining oat mixture.

Sprinkle evenly over rhubarb.

Wheat Walnut Rhubarb Bread

I am still trying to use up the rhubarb my grandpa gave me. I found this recipe in a local magazine but of course I changed the original recipe up by adding the whole wheat and incorporating more rhubarb.

Ingredients;
1 &1/2 cups of whole wheat pastry flour
1 cup AP Flour
1 cup of brown sugar (not packed)
2/3 cup canola oil
1 cup buttermilk
1 tsp pure vanilla
1 tsp baking soda
1 tsp Cinnamon
2 cups of finely chopped rhubarb
1 cup walnuts (chopped finely)
1 egg

Directions:

Preheat oven to 350:

1. Place oil, egg, & sugar in medium bowl and mix.

2. Add buttermilk & vanilla and mix until incorporated thoroughly.

3. In a separate bowl sift both flours, baking soda, & cinnamon.

4. Add dry ingredient mixture into wet ingredient mixture.

5. Add in rhubarb and walnuts.

6. Fold the batter until all the ingredient are spread throughout.

7. Divide the batter evenly into 4 mini pans (about one heaping cup each)

8. Bake for 32 to 35 minutes at 350. Check bread using toothpick method.

Please note if you would like to bake a traditional size bread this batter will make two loaves. Bake traditional loaves for 45 minutes or until toothpick comes out clean.

Rhubarb Cardamon Whole Wheat Scones

I just placed these scones in the oven.

Ingredients:

2 cups Rhubarb chopped
1 1/4 cup of whole wheat pastry flour
1 1/4 Cup of AP flour
1 teaspoon of baking powder
1teaspoon of Cardamon ground
1/2 teaspoon of salt
3/4 cup of heavy cream
One stick of butter cup chopped (1/2 cup) Unsalted
1 teaspoon of pure vanilla
1 TB of vanilla sugar & 2 TB of sugar
1/4 cup of sugar

Dusting:
1.5 TB of vanilla sugar
2.5 TB of sugar

1. Preheat oven to 425 degrees

2. In a small bowl take chopped rhubarb and coat well with 1 tb of vanilla sugar and 2 TB of sugar. Set a side.

3. In a separate bowl sift together both types of flour, salt, cardamon, 1/4 cup of sugar and baking powder.

4. Cut butter into the flour mixture.

You can use a pastry cutter for this but I prefer using my hands. Cut until butter is in pea sizes.

5. Add rhubarb and liquids.

6. Use a spatula to mix. And knead until dough form and everything is incorporated. Don’t over knead/mix.

Make sure no flour is left behind.

7. Separate dough evenly into a Pam Spray coved scone pan.

8. Now sprinkle with dusting sugar

9. Bake scones for 20 to 24 minutes on 425 or until golden brown.

Yields 16 to 20 scones depending on the size of your scone pan. As pictured the scones are 2.5 by 2.5 by 3 inches.

 

Special note: next time I make these I am going to try using fat free half and half to decrease the saturated fat content.

Strawberry-Rhubarb Whole Wheat Shortbread

Strawberry Rhubarb Shortbread

My grandpa gave me fresh rhubarb from his garden this past weekend.  I couldn’t wait to use it. I love baking with rhubarb!! I have made rhubarb muffins, rhubarb cupcakes, rhubarb bars, rhubarb pancakes but never have I made shortbread using rhubarb. We had a very special birthday in the office today so I researched for a new rhubarb recipe to try and when I came across this recipe for Rhubarb Shortbread I had to give it a whirl. This recipe was adapted from a recipe  on PBS’s website http://www.pbs.org/food/kitchen-vignettes/rhubarb-cardamom-shortbread-bars/. The original recipe called for a few different ingredients so I switched it up slightly since I didn’t have spelt flour , cane sugar, nor did I have red wine on hand.

Ingredients:

Dough:

1 Cup of Whole Wheat Pastry Flour

1 Cup AP Flour

A pinch of salt

1 Teaspoon of baking soda

2 Teaspoon of ground cardamom

2 sticks of butter (unsalted and brought to room temperature)

1 Cup of Sugar

2 Egg Yolks

Baking dish needed: 10 inch tart pan

Rhubarb Compote:

2 Cups of Rhubarb Chopped

1/2 cup Strawberries chopped

1/3 Cup of Sugar

1 Teaspoon of Water

1 Teaspoon of Pure Vanilla

 

Directions for the Dough:

 

  1.  Sift all the dry ingredients together in a large bowl.

2. In a separate bowl, cream the butter until fluffy.

3. Add the eggs yolks one at a time and sugar and mix well.

4. Add the dry ingredients ingredients and combine the two until a soft dough has formed.

5. Form the dough into two balls, make sure to form one larger than the other.

Wrap the dough in plastic cling wrap and place in  freezer for 30 to 45 minutes. them for a minimum of 30 minutes.

6. For the Compote: Place a 2 quart sauce pan on low heat, add water, sugar,  strawberries, rhubarb into the pan. Make sure to stir often. Add the sauce to come to a simmer and then reduce the heat to low continue to stir often.

7. Remove from heat after thickened and stir in the vanilla. Place the compote in a freezer safe bowl and sit on ice in the freezer for at least 30 to 45 minutes to cool completely.
8. Preheat oven to 350.  Once compote is cooled get the larger piece of dough out of the freezer and start to grate with larger holes on a grater directly into a Pam Sprayed 10 inch tart pan.

9. Pat down the dough into the pan lightly.

10. Spread the rhubarb compote over the first layer of dough evenly. MAKE sure to leave a least a half inch from the perimeter  to prevent leaking on the outside.

11. Now take out the second dough ball and grate over the top of the rhubarb compote.

12. Pat down the dough very lightly. You will still see some compote poking through but it is okay.

13. Bake at 350 for 35 to 45 until the entire top is evenly golden brown.

14.  Allow the pan to cool completely before cutting into this delightful treat.
