Chili Spice Fries in the actifry 

Today we had a healthy cooking food demo at work for the wellness program. Our dietetic intern presented on slow cooker meals and quick easy healthy dinners. This was her second presentation on this topic. Last week I made partytime beans in the crock pot for her presentation and today we decided to share the love of the actifry. The actifry is one of my favorite healthy kitchen tools, I love the fact it eliminates all the fat except for 1-2 TB or even sometimes, I just use cooking spray. I think by the end of the session we had everyone participating wanting an actifry. For the demo, I made my chili spicy fries, which were and always are a big hit.

 

Ingredients:

4 large baking potatoes (scrubbed well and washed with water)

1 1/2 c tsp chili powder

1 tsp kosher salt

1 tsp garlic powder

2 tb olive oil

Directions:

  1. Cut fries about 1/2 inch thick and 3 inches long. Do not peel the skin (all the nutrition and fiber is in the skin). Place the fries, seasonings, and oil in actifry. Set timer for 40 minutes or until browning effect takes place and fries are cooked to your standard.
  2. Enjoy!

 

Homemade Hand Cut bbq Potato Chips

I don’t know why I have not tried these earlier…. We make homemade fries all the time. I guess partially because I was afraid of my mandolin. But I don’t know why it is amazingly quick and easy. However please note it is also very sharp! Please use the protective tool. I love using my Actifry for potatoes. I really like this recipe because these potatoes came from my grandpa’s garden.

Ingredient:

3 large potatoes (peeled and cut very thin 1/8 inch)
1 tsp northwood seasoning
1/2 tsp northwood fire seasoning
1/2 tsp seasoned salt
1/8 tsp ground roasted garlic seasoning
2 TB canola oil
Actifry

1. Place all the ingredients in the Actifry. Start with potatoes slices on the bottom then add oil and seasoning.

Roasted Yellow Beets in the Actifry

I bought these colorful beets in the strip district last weekend and have been eager to try them ever since . Being as though I’m on the Actifry kick I decided to try to roast them in the Actifry for 40- 45 minutes. These are delectably sweet and a nice switch from the traditional purple beet.

Ingredients:

4 medium sized yellow beets (peel rough spots & chopped into even 1 inch pieces)
1/2 tsp Spicy Mrs. Dash
1/2 tsp Penzeys Mural of Flavor
1 TB dried shallots
1/8 tsp garlic salt
Canola Oil cooking Spray

Directions:

1. Place all the ingredient in the Actifry. Set timer for 40-45 minutes.

2. Enjoy!

Non Deep Fried “actifry” Ravioli

I love my actifry and I think my husband and I are going to challenge ourselves to using it everyday for a month. Starting with This recipe.

Ingredients:
1/2 a bag of frozen ravioli (about 20 (2 inch in diameter) (cheese or meat)
1/2 tsp garlic salt
1 tsp pasta sprinkle
1 tb olive oil
2 TB whole wheat breadcrumbs
1 TB parmesan cheese

Directions:

1. Place all ingredients in the Actifry (even the ravioli in the frozen state).

2. Set the actifry for 15 minutes.

3. Enjoy with Homemade marinara sauce

Kielbasa, Peppers & Potato Bliss

Looking for a quick dinner fix and have an ActiFry try this recipe. It will be done in 20 minutes! Who needs take out when you can prepare a meal in 25 minutes. Not to mention only one vessel to clean!!

Ingredients:
2 Chicken kielbasa Sausage (cut into 8- 10 pieces each)
2 small potatoes (cut into bite size pieces)
Salt and pepper to taste
1 tsp Pasta sprinkle (or Italian seasoning)
1/4 cup to 1/3 cup pasta sauce
1/2 medium onion (cut into quarter inch strips)
4 small garlic cloves
1/2 cup yellow pepper sliced
1/2 cup orange pepper sliced

Directions:

Place everything in the actifry and set timer for 20 minutes! You will love them smell that permeates throughout the house!

Now you can eat this alone or enjoy with some brown rice!

Homemade Granola in the Actifry

Today is Registered Dietitian Day!! In honor of this special day I made my coworkers homemade granola in the ActiFry. It turned just right with so much less fat than tradition granola! I placed the granola in recycled jelly jars. For an added touch I placed a decorative cupcake wrapper on the top and tied a string with handmade name tag. The stickers on the jar reads “energy in a jar”. Perfect snack during a long day!

Ingredients:
2 cups of rolled oats
3/4 cup slivered almonds and/or pumpkin seeds
2 tsp milled flaxseed
1/6 cup dried blueberries
1/6 cup dried cranberries
1/4 cup honey
1 tsp vanilla
1 tsp ground cinnamon
1/8 tsp kosher salt
1 TB canola oil

Directions:

Place all ingredients in bowl except for dried fruit. Mix well to incorporate. Place the mix into the ActiFry. Set timer for 7 minutes. Once timer does off add dried fruit and set timer for 3 additional minutes. Once the time has elapsed spread the granola onto a sheet pan to cool. Enjoy! We like it best in our yogurt!!!
