Maple Cinnamon Toasted Granola

March is National Nutrition Month & tomorrow is Registered Dietitian Day! I like to celebrate with a bold nutritious dense cinnamon delicious treat. I made this blend to honor my Clinical Team. RD day is a way to celebrate the wonderful profession of nutrition and dietetics and to honor hard working dietetic professionals.

Granola is very versatile!  You can put just about anything in it. You can make it sweet or savory. You can eat granola dry, or add a splash of milk, or top off your yogurt with it. I like to incorporate it into Ina Garten’s Banana Muffins. They are my most requested muffin recipe.

Yields: 4 cups

Servings: 8 (1/4 cups)

Ingredients:

2 cups 100% rolled oats (not quick or instant)

1 cup puffed brown rice

1/2 teaspoon Vietnamese ground cinnamon

3 Tablespoons brown sugar (not packed)

1/4 cup canola oil

1/4 cup 100 % pure maple syrup

1 teaspoon pure vanilla extract

2/3 cup dried cranberries, low sugar

1/4 cup lightly salted roasted sunflower seeds

1/8 cup pepita seeds

Directions:

1. Preheat oven to 300 degrees. Line a 1/2 sheet pan with parchment paper. Set aside.

2. In a large bowl mix together the first 4 ingredients. Set aside.

3. In a small bowl mix together canola oil, maple syrup,& vanilla. Pour the liquid ingredients over the dry oat mix. Give the mixture a good stir. Make sure all the dry ingredients are coated with liquid goodness.

4. Pour the oat mixture on the prepared baking sheet. Place the pan in the preheated oven. Bake for 15 minutes.

5. After 15 minutes elapsed use spatula to toss the granola on the pan. Allow to bake for another 5 minutes and continue to repeat until you reach desired golden brown hue. It took about 20 additional minutes. Add the seeds and craisins. All to cool on pan entirely. Enjoy!

Maple Granola in the Actifry

Our Mother’s Day Brunch is tomorrow and we are prepping for the festivity. This year we are having a yogurt bar. I cannot think of a better topping for the yogurt other than homemade granola (and fresh berries)!

Since I made this granola in the actifry, I was able to cut way down on the fat. Most granolas have high amounts of unwanted fat, but the actifry allows you to cook with minimal oil and have the same result in texture with the cooking process.

Next time you go to the store take a peek at the label before you purchase “healthy granola”.

Ingredients:

1/2 cup steel cut oats

1/2 cup old fashioned oats

1 cup puffed wheat cereal

1/6 cup dried cranberries

1/6 cup raisins

1 tsp pure vanilla

1 tsp ground cinnamon

1 TB canola oil

1/3 cup pure maple syrup

2 TB grounded Flaxseed

Directions
:

Place all the ingredients in the Actifry and set the timer for 10 minutes. Allow the granola to cool prior to eating. Enjoy the granola on its own or on top of yogurt!

Homemade Granola in the Actifry

Today is Registered Dietitian Day!! In honor of this special day I made my coworkers homemade granola in the ActiFry. It turned just right with so much less fat than tradition granola! I placed the granola in recycled jelly jars. For an added touch I placed a decorative cupcake wrapper on the top and tied a string with handmade name tag. The stickers on the jar reads “energy in a jar”. Perfect snack during a long day!

Ingredients:
2 cups of rolled oats
3/4 cup slivered almonds and/or pumpkin seeds
2 tsp milled flaxseed
1/6 cup dried blueberries
1/6 cup dried cranberries
1/4 cup honey
1 tsp vanilla
1 tsp ground cinnamon
1/8 tsp kosher salt
1 TB canola oil

Directions:

Place all ingredients in bowl except for dried fruit. Mix well to incorporate. Place the mix into the ActiFry. Set timer for 7 minutes. Once timer does off add dried fruit and set timer for 3 additional minutes. Once the time has elapsed spread the granola onto a sheet pan to cool. Enjoy! We like it best in our yogurt!!!
