Actifry Pesto Chicken & Potatoes


If you don’t know it by now, we love the Actifry at our house. We use this wonderful cooking gadget at the very least weekly. It is such a time saver. It can cook just about anything main dishes,sides, desserts, and snacks.

I appreciate using this device during weeknights for a quick easy dinner. Bonus easy clean up with essentialy a one pot meal. At the end of the meal, just throw everything in the dishwasher and call it an evening. 

We have so much Pesto, I have been adding it to everything. This recipe came to made on my way home from work. 

Prep time: 5 minutes  

Cooking time: 40-43 minutes

Servings: 2 large meals or 4 small

Ingredients:

2 ounces of prepared Pesto, divided

2 chicken breast, cubed into 1 inch pieces

2 Tablespoons olive oil

2 medium potatoes (about 3 cups, cubed 1 inch pieces) (washed clean & not peeled)

Tools for the Job:

  • Actifry

Directions:

1. In either a ziplock bag or sealable container marinate the chicken breast ovennight with 1 ounce of Pesto.

2. When ready to prepare the dish,place the prepared potatoes with oil & remaining 1 ounce of Pesto in the actifry. Close the lid. Place the timer on 20 minutes. 

3. Add the chicken in the Actifry with the potatoes and place the timer on for another 20-23 minutes.

Chipotle Chicken Sausage with Summer Squash 


If you are looking for a quick vibrant dinner than look no further. If you have an actifry this is a simple dinner that only requires one vessel for cooking. I love my actifry! I use it at least weekly if not a few times a week to make entrees or side dishes and snacks! 

Servings: 2 
Ingredients:

2 chipotle chicken sausage 

1 small zucchini or any summer squash (cut into quarters)

1/2 a large Green pepper

1/4 large red onion

1 tablespoon Dijon whole grain mustard 

1 tablespoon olive oil 

1/c cup baby carrots

1/8 tsp kosher salt
Directions:

Place everything in the actifry. 

Maple Granola in the Actifry

Our Mother’s Day Brunch is tomorrow and we are prepping for the festivity. This year we are having a yogurt bar. I cannot think of a better topping for the yogurt other than homemade granola (and fresh berries)!


Since I made this granola in the actifry, I was able to cut way down on the fat. Most granolas have high amounts of unwanted fat, but the actifry allows you to cook with minimal oil and have the same result in texture with the cooking process. 

Next time you go to the store take a peek at the label before you purchase “healthy granola”.

Ingredients:

1/2 cup steel cut oats

1/2 cup old fashioned oats

1 cup puffed wheat cereal

1/6 cup dried cranberries 

1/6 cup raisins

1 tsp pure vanilla

1 tsp ground cinnamon

1 TB canola oil

1/3 cup pure maple syrup

2 TB grounded Flaxseed

Directions
:

Place all the ingredients in the Actifry and set the timer for 10 minutes. Allow the granola to cool prior to eating. Enjoy the granola on its own or on top of yogurt!

Chili Spice Fries in the actifry 

Today we had a healthy cooking food demo at work for the wellness program. Our dietetic intern presented on slow cooker meals and quick easy healthy dinners. This was her second presentation on this topic. Last week I made partytime beans in the crock pot for her presentation and today we decided to share the love of the actifry. The actifry is one of my favorite healthy kitchen tools, I love the fact it eliminates all the fat except for 1-2 TB or even sometimes, I just use cooking spray. I think by the end of the session we had everyone participating wanting an actifry. For the demo, I made my chili spicy fries, which were and always are a big hit.

 

Ingredients:

4 large baking potatoes (scrubbed well and washed with water)

1 1/2 c tsp chili powder

1 tsp kosher salt

1 tsp garlic powder

2 tb olive oil

Directions:

  1. Cut fries about 1/2 inch thick and 3 inches long. Do not peel the skin (all the nutrition and fiber is in the skin). Place the fries, seasonings, and oil in actifry. Set timer for 40 minutes or until browning effect takes place and fries are cooked to your standard.
  2. Enjoy!

 

Mystery Cheese Potatoes

I placed these fries in the Actifry. The reason they are called Mystery  fries is because we went to one of our favorite shops in the strip district & they have a cheese called “mystery cheese. ” Of course we had to purchase some. The owner was too cute and told us what the cheese was even though it was considered quote on quote “mystery cheese.” 

Ingredients:

1/4 cup a blend of grated Parmesan, Asiago, Romano Cheese

1 teaspoon of garlic salt

1/2 teaspoon of garlic powder

1/2 teaspoon of dried oregano 

1/2 teaspoon of paprika

2 tablespoons of olive oil

4 medium to medium large local potatoes 

Directions:

1. Clean, don’t peel, & cut potatoes into sticks. Place in actifry. Pour olive oil over the potatoes.

2. Sprinkle with remaining ingredients and set actifry for 45 minutes. Add additional salt to taste. 

3. Enjoy! 

Pizza Flavored Oyster Crackers in the Actifry

 
Pizza is a favorite in our household. These tasty crackers are a satisfying alternative when you are craving a bite. They are also perfect for a football party. This recipe was inspired by the TOH magazine Feb/March 2016 issue. However I cut the fat down significantly with the power of the actifry by only using a quarter of the fat. 

Ingredients:

1 (10 oz) bag of oyster crackers

3 TB pizza seasoning 

1 tsp garlic salt

1 tb hot pepper flavored olive oil

1 tb of olive oil 

1/3 cup freshly grated peccorino romano cheese

Directions:

1. Place all the ingredients in the actifry and set the timer for 15 minutes! Let the crackers cool slightly before snacking!

 

Garlic Roasted Pumpkin Seeds in the Actifry

  

I just finished roasting half a dozen pie pumpkins in the oven. One of the best parts of making the purée is roasting the nutritious pumpkin seeds. Today I used the actifry! 

Ingredients:
1 cup of dried pumpkin seed

1/2 tsp garlic salt

1 tsp olive oil 
Directions:

1. Place all the ingredients in the actifry and turn on the “frier” for 10 minutes. 

2. Allow to cool and enjoy!

Spiced “fried” Apple slices

  

My grandpa brought me over some homegrown apples last weekend from his orchard. Now I love me a fresh apple a day! But I’ve been always wanting to try them in the Actifry!?

Tomorrow we are having a brunch for the September birthdays in the Family before we head downtown to the Pirate’s game. I think I am going sprinkle these ontop of some homemade overnight French toast!

Ingredients:

8 cups of apples corded and sliced into wedges

1/2 teaspoon of ground Vietnamese cinnamon

Two 2-3 inch cinnamon sticks

2 tablespoons of honey

2 tablespoons of canola oil

1/8 teaspoon each of mace, cloves, and nutmeg

Directions:

1.  Place all the ingredients in the Actifry and allow to cook for 12-15 minutes! 

Garlic Turnip Fries in the Actifry

Generally I eat turnips raw but recently tried them in the oven. Now I am hooked, so if I like them baked in the oven, I know I will love them in my actifry.

Ingredients;

  • 2 medium turnips cut into strips like fries (no need to peal)
  • 1/4 tsp sandwich sprinkle (a mixture of salt, garlic,tell lichen pepper, basil,oregano, rosemary, thyme and marjoram)
  • 1/2 tsp pasta sprinkle (a blend of oregano, basil,thyme and garlic
  • 1/4 to 1/2 tsp fresh ground pepper
  • 4 whole garlic cloves 

Directions

  1. Cut turnips into even strips.
  2. Place in cooking sprayed actifry vessel and lightly spray strips with cooking spray and sprinkle with seasonings.
  3. Set timer for 30 minutes. 

Homemade Hand Cut bbq Potato Chips

I don’t know why I have not tried these earlier…. We make homemade fries all the time. I guess partially because I was afraid of my mandolin. But I don’t know why it is amazingly quick and easy. However please note it is also very sharp! Please use the protective tool. I love using my Actifry for potatoes. I really like this recipe because these potatoes came from my grandpa’s garden.

Ingredient:

3 large potatoes (peeled and cut very thin 1/8 inch)
1 tsp northwood seasoning
1/2 tsp northwood fire seasoning
1/2 tsp seasoned salt
1/8 tsp ground roasted garlic seasoning
2 TB canola oil
Actifry

1. Place all the ingredients in the Actifry. Start with potatoes slices on the bottom then add oil and seasoning.
